This isn't really how many types of cheese but if you read this its says thousands of kinds.
Cheese
According to legend, cheese was first made in the Middle East when a man travelled across the desert with his saddlebag full of milk for the journey. After some time he stopped for a drink and found that the milk had soured. It had become solid lumps and watery liquid, or curds and whey.
The curds are the solid part of milk, and consist of protein, fat, water and a small amount of sugar and milk. The whey is the liquid that separates from the solid. It contains sugar.
Today there are thousands of different kinds of cheese. The most popular kind is cheddar. It was named after the village of Cheddar in England.
Cheddar is made by heating the curds so they lose moisture, or whey, then pressing them so that even more moisture is lost. The last of the whey is then drained off.
First the curd is cut into large blocks which are stacked on racks, then rotated so that different ones are on top. This is called 'cheddaring'.
The next stage is to mill the curds into small pieces and add salt. The curd is then put into big hoops lined with cheesecloth and pressed.
After this the cheese is left to mature, kept at 12º C. Every few weeks the cheeses are turned and brushed so that they mature evenly. The longer it is stored, the more flavour a cheese develops. Tasty cheddar is usually stored for 4-8 months.
Modern methods of cheesemaking have made the cheese flavours more standard. Instead of using cheesecloth, large blocks of cheddar are pressed into blocks which are then vacuum-packed. This doesn't allow the cheese to breathe and form a rind like the traditional method, but it does make it cheaper to make cheese.
Processed cheddar is made from a blend of cheddars. It is heated with additives which prevent it from maturing. Processed cheddar is made into blocks, slices or sticks. It is also made into a spread.

my best guess is hundreds. i have my favs and there are some i just cant abide by. cheddars, swiss, muenster, havarti are some of my favorites. limburger smells too bad to even get close to my mouth so i give that one a thumbs down. also, soft ripend cheeses such as brie and camembert are low on my list. blue cheeses are a bit much, too. then you have feta(goat cheese) which is kind of o-k. dont forget the italian cheeses. they all have their place in cooking authentic italian recipies. so just remember to smile and say.........CHEEEEEESE!!!!!!

There are too many to mention...there are as many as there are cheese vendors.
Feta...smells like feet, but essential for many dishes.
Provolone....smooth, mild, great on hot italian sandwiches.
Gorgonzola....spicy flavor, bleu goat cheese. Good mixed with cream cheese on bread, or good in cream sauces for italian pasta.
Roquefort or bleu...very strong, pungent...good in salads, or with apples.
Chihuahua...very smooth, melts well, very buttery. Widely used in mexican recipes.
Queso fresco...rubbery cheese that crumbles. Pretty, but I personally am not excited about it.
Gruyere..swiss cheese without holes. Very nutty, mild...good melted on sandwiches, or in a quiche, in stuffed zucchini, or in french onion soup.
There are soooo many other cheeses....You really need to get to a cheese website.
