We are having a priest celebrate a funeral mass; the priest said the fee is entirely up to the family, but is there a standard flat fee or some rule of thumb for determining the amount?

I ask $200 for someone who is not a member of my church. For a member it is free. Compare this to the cost of the undertaker and the burial plot -- which can run into the thousands of dollars.

I don't think you need to pay him anything, he gets paid by the church and he's doing his job. Perhaps drop a few extra bucks in the offering next time.
However, a card or letter thanking him for his hard work is fine.
