Beet greens are absolutely edible, taste alot like spinach or chard, and can be prepared right along with the beets.

Yes! They use them like spinach in India. They work well in beet soup!

yes however they are extremely bitter and dont taste too good eaten as is. Braise them in water with basic mire poix,ham hocks, and reduced, squeezed orange juice
They can then replace any vegetable or substituted for sauteed spinach

Yes, they're edible, and they're more nutritious than many other more "Common" greens.
Just make sure you wash them REALLY thoroughly (they get really sandy). Use them as you would use fresh spinach.

Yes - as long as they are crispy and fresh and not wilted or nasty. Use any basic "greens" recipe - they are delicious.
