After the oil cools, I pour it through a fine strainer and back into the bottle. How many times you can re-use it depends on what you are cooking. Foods high in protein (Meat, chicken, fish, cheese, eggs) are good for maybe four times. Vegetables, potatoes, onions are good for about nine times. When the smell isn't nice anymore, switch to new oil.

You can keep it for some time, just sift the oil through a sifter or colinder to keep the oil clean and have a longer shelf life.

A few monthes 5-6 at the most with cleaning until you need to replace oil, but some go longer than that.

Don't store the fryer with the oil in the reservoir.

After use, cool the oil and put it in a container for storage.

I take mine out and put it in a large jar in the fridge, as I don't use it often .If you use it regularly then it should last at least until it is time to change the oil .

At my restaurant we change it twice a week or sooner if it starts to smoke a little or tries to get foamy.

My experience is that if it is constantly used it will get thin and go brown. When it gets to a dark tan then replace.
