You could grill the eggplant in slices, until the texture is soft...just add salt and pepper with oil.
Or you could pan fry it, until its soft..never eat eggplants raw or undercooked, they are poisonous and make you ill.
So just bake, grill or saute the eggplant until it's no longer firm, but soft.

Well, how to make eggplant...
Thins is one of my fave recipes...
Toy cut the eggplant in half, lengthwise... then you carefully cut out the meat (the filling, the eggplant) without cutting the skin...
Then, cut the filling into little squares, and put a lot of salt on the skins (inside of course) and pieces of eggplant, let them stay there for about 2 hours and you will see how the salt has extracted a lot of water from them.
You rise all of the salt off, making sure they aren't salty...
Doing this you will take away the bitterness and the zing it leaves on your tongue...
Then mix the dices eggplant with tomato sauce, pepper, salt, oregano, grated Parmesan cheese, fill the eggplant skins with this and put some grated mozzarella cheese on top, cover em with foil, stick em in the oven for about 45 min or until cooked and enjoy!!! :)

Sweetie,my favorite dish anytime is :Eggplant Lasagna.
You need to cook the eggplant(i have suggested this recipe to someone before,and didnt add that detail.The reason i say that,is if you put it in it will not get done in time,everything else will have heated through.)Making lasagna is basicly,putting ingredients together and heating them through.You use eggplant slices(cooked whichever way you prefer) and use those in place of the noodles.You assemble as if you would lasagna if you were using pasta.(Sauce,eggplant slices,cheese,sauce,eggplant slices,cheese,etc until you use up all the ingredients).Place in the oven and let it bake until it is heated through and the cheese on top has browned.Delicious!My mouth is watering!Good luck hun,and have a good evening.Hope you enjoy this dish as much as we do!!

Search on google for eggplants. There are MANY different ways to serve eggplant, but I have heard that if you buy an eggplant and you plan to eat it you should prepare it within 3 days or it goes bad.

if you slice it put salt on it and stack all the slices on a plate put a heavy plate on top and this will take out the bitterness. then dip it in egg and bread crumbs and fry it then eat it or layer it in a pan with red sauce and mozzarella cheese (like lasagna) and bake it
