Cranberry & Walnut Oat Slices
INGREDIENTS
• 200g/ 7oz plain flour
• 200g/ 7oz porridge oats
• 250g/ 9oz unsalted butter, softened
• 175g/ 6oz soft light brown sugar
• Finely grated zest of 1 orange
• 100g/ 3½oz walnut pieces
• 350g/ 12oz jar of cranberry sauce
TO SERVE
• Greek yogurt (optional)
METHOD
• Preheat the oven to 200ºC/fan 180ºC/gas 6.
• Butter an approximately 20cm square cake tin and line the base with greaseproof paper.
• Rub together the flour, oats and butter to a coarse crumb consistency. Mix in the sugar, orange zest and walnut pieces, and then press half of it into the tin.
• Spread the cranberry sauce over the top and scatter over the remaining oats mixture, pressing down lightly.
• Bake in the oven for 35 to 40 minutes until the top is lightly golden. Leave to cool in the tin for about 30 minutes, remove and cut into twelve squares, or larger pieces if you prefer.
• These are delicious served the day they are made, but they will also keep in an airtight container for 3 to 4 days.

Beef Wrapped in Pancakes
INGREDIENTS
• 50g unsalted butter
• 400g lean minced beef
• 1 medium onion, finely chopped
• 1 garlic clove, crushed to a paste
• Salt, and freshly ground black pepper
• 1 tbsp plain yoghurt
• 1 tbsp double cream
• Squeeze of lemon juice
• 1 tsp dill, finely chopped
• 2 tbsp soured cream
• 8 ready made crêpes
• 2 tbsp olive oil, for frying
To serve
• Soured cream
• Fresh dill
METHOD
• Heat half of the butter in a frying pan over a moderate heat and add the minced beef. Fry for a few minutes until browned.
• Stir in the onion and garlic and continue to cook over a low heat for 30 minutes.
• Remove from the heat and season with salt and freshly ground black pepper and then leave to cool slightly before adding the cream and yoghurt, lemon juice, dill and sour cream. Mix well.
• Take a crêpe and place a heaped tablespoon of the meat mixture in the centre and wrap up to form a parcel.
• Heat the remaining butter in a clean frying pan with the oil and fry the parcels gently until golden and heated through. Serve immediately with soured cream and sprigs of dill.
