here's the recipe

INGREDIENTS
1 1/4 cups firmly packed light brown sugar
3/4 cup JIF® Peanut Butter
1/2 cup Butter Flavor CRISCO® Stick
3 tablespoons milk
1 tablespoon vanilla
1 egg
1 3/4 cups sifted all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt

I would use one whole egg and the yolk from a second in this scenerio. Using the whole second egg might be a tad too much liquid.

Eggs are definitely the best option. I haven't tried it with cookies, but often, mayonnaise works as an egg substitute. Mayo is essentially made of oil and eggs (sometimes vinegar is added), so you'd want to take some of the oil out of the recipe, as well.

I would add 2 eggs. Or, you could beat 2 eggs and take a teaspoon out, and continue with your recipe.

you have to weigh an egg first.then add 40% of the other one.
