Wow! This is a question that can give you countless answers. I would suggest visiting www.allrecipes.com because you can do your own Ingredient Search. Fill in the boxes with ingredients you do have or want in your dish. Then, they give you a list of different dishes and suggestions for side dishes.
(This is how I usually do it when I'm feeling uninspired.)

Chicken breasts stuffed with feta cheese and artichokes, wild rice pilaf, fresh green beans with almonds, and something chocolate for dessert!

2 large chicken breasts
1 can artichoke quarters, drained (liquid reserved)
feta cheese with sundried tomatoes and herbs
white wine
dijon mustard

Cut a small opening in each breast and insert your finger. Make the pocket large enough to hold a good amount of the stuffing.
Chop several of the artichoke quarters and blend with the cheese. Place 1 -2 tablespoons of the filling in each breast. Salt and pepper the outside. Brown in a skillet with olive oil. Place in a baking dish with a little white wine and bake until breasts are cooked through, about 40 minutes at 350 degrees. In the meantime, add artichoke liquid and a little wine to the skillet and deglaze. Cook liquid down until it begins to thicken and add 1/2 tsp of dijon mustard. When breasts are finished, top with sauce and serve.

It should be easy to grill a couple of steaks, chicken breasts, or fish filets (depending on what you both like). Steam some veggies, bake a couple of potatoes (or make rice). As for dessert, some ice cream or pie would be simple and nice.
