Yes. Salt and Pepper it and place in a 350 degree oven with a meat thermometer strategically placed in the thickest part. When it gets to 110 F take it out and start gnawing......YUMMY.

Slow Roasted Pork Neck

The slow roasting makes this pork lovely and succulent so be careful not to try and speed things up. Enjoy

6 servings 4½ hours 30 min prep

2 tablespoons olive oil
2 teaspoons chopped sage
2 garlic cloves, chopped
1 tablespoon tomato paste
1 kg piece pork necks
7 slices prosciutto
1/2 cup white wine
1/2 cup chicken stock


Preheat oven to 250
In a small bowl mix together oil, sage, garlic and tomato paste. With a knife, make small incisions into the prok. Rub in mixture and season well.
Lay prosciutto on the chopping board. Place pork on top, and fold over so the pieces of prosciutto wrap around the pork. Tie and secure with kitchen string.
Heat a medium sized heavy based baking dish onto the heat. Add pork and cook, turning, until browned. Add white wine and let sizzle. Add stock and cover tightly with foil.
Bake for 31/2-4 hours or until tender, checking that liquidy isn't evaporating too quickly.

Pork Neck Bones and Sauerkraut
Pork neck bones are one of the most flavorful parts of the pig. There is not much meat on the bones, of course, so they are not expensive. They can be used as a flavoring for greens and for making soups.
INGREDIENTS
Pork neck bones
1 pinch sugar
Fried onions
Sauerkraut
Place pork neck bones in a covered pot with sauerkraut, simmer until they are deliciously tender. Put a pinch of sugar and some fried onions in the sauerkraut, and then load the pot with the neck bones.

Pork Neck Steaks

Ingredients

1 Large Onion Chopped
1 Large Carrots Chopped
1 Large Red Capsicum Chopped
Olive oil For Frying
2 Tbsp. Tomato Paste
3 Chicken stock Cubes
1 Cups Shiraz Good Quality
500 Grams Mushrooms Champignons
1 Tsp. Pepper
1 Tsp. Salt
4 Tsp. Flour
2 Tsp. Parsley Fresh
1 Tsp. Oregano Dried
2 Bay leaves
2 kg Pork Neck Cut into 8 steaks
8 Cloves Garlic Sliced


Method
Mix flour, salt and pepper. Dust steaks and seal off in frying pan. Place in casserole dish. Add vegetables, bay leaves, oregano and parsley and cook for 2 minutes. Add tomato paste and cook for a further 2 minutes. To this add 2 teaspoons of left over flour and cook for 2 to 3 minutes. Add wine and stock, bring to boil and season to taste and pour over steaks in casserole dish. Bake in oven at 170 degrees for 2 hours. Check liquid level half way through cooking. This dish is much tastier the next day. Reheat fir 45 minutes at 170 degrees or until warmed through.
