Seven layer dip
2 ripe avocados, peeled, pitted and halved
Juice of 1/2 a lime
1/2 tsp. ground cumin
1 can (15 oz.) black beans, drained, rinsed
1 cup Sour Cream
1-1/2 cups Thick 'N Chunky Salsa, drained
1 bunch green onions, white and green parts, finely chopped
1 cup Mexican Style Shredded Four Cheese
1 small head red radicchio, shredded (about 1 cup)
SPOON avocado pulp into medium bowl. Add lime juice and cumin. Mash avocados lightly just until mixture is well blended. (Mixture will still be slightly chunky.)
SPREAD beans onto bottom of 1-1/2-qt. serving dish or deep-dish pie plate; cover with avocado mixture. Top with layers of sour cream, salsa, onions, cheese and radicchio.
SERVE with your favorite Crackers or tortilla chips.
Ham and green chili roll-ups
2 Tbsp. Mayonnaise
4 whole wheat tortillas (6 inch)
1 pkg. (6 oz.) Smoked Ham
1/4 cup canned chopped green chilies, well drained
1/4 cup Shredded Four Cheese Mexican Style Cheese
SPREAD mayo evenly onto each tortilla to within 1/4 inch of edge.
TOP evenly with ham, chilies and cheese; roll up.

Apple and Blueberry Tart
Ingredients
vegan shortcrust pastry
4 tablespoons blueberrys
2 sweet eating apples (one green and one red)
lemon juice
Icing sugar
Grease a flan dish or other oven proof dish and place the pastry in it. Blind bake it for 10 minutes in a 180 degree oven.
Slice the apples (leaving the skins on but removing the core) and soak in a bowl of water with lemon juice added. Once the pastry is cooked put the blueberries into the bottom and spinkle with a layer of icing sugar and then lay the apples alternately red then green in a fan shape.
Brush with olive oil and bake in the oven for 20 minutes. Dust with icing sugar when serving if required.

Good ole Waldorf Salad
This is a basic recipe for Waldorf Salad with apples and walnuts.
INGREDIENTS:
2 cups coarsely chopped apples, about 2 medium apples
1 cup chopped celery
1/2 cup mayonnaise, or to taste
1/3 cup coarsely chopped walnuts
mixed salad greens or lettuce
PREPARATION:
Waldorf Salad. Toss all ingredients together in a serving bowl. Serve Waldorf salad on mixed salad greens. This waldorf salad serves 4.

Baked Apple Dumplins with Lemon Sauce
1/2 cup packed brown sugar
1 1/2 teaspoons cinnamon
7 teaspoons butter, softened
7 medium apples, cored, peeled
2 cups buttermilk baking mix
1/3 cup ice water
1 tablespoon oil
2 cups water
1 cup sugar
1 tablespoon butter
1/2 teaspoon cornstarch
1 tablespoon lemon flavoring
Mix brown sugar and cinnamon in small bowl. Place 1 teaspoon butter and 2 teaspoons brown sugar mixture in each apple. Combine baking mix, 1/3 cup ice water and oil in bowl; mix well. Roll to 1/4-inch thickness on floured waxed paper. Cut into 7 squares. Place 1 apple on each square. Bring corners up to enclose apples; fasten with toothpicks. Place in greased 10x10-inch baking dish. Combine 2 cups water and sugar in saucepan. Bring to a boil, stirring until sugar dissolves. Add 1 tablespoon butter and cornstarch dissolved in a small amount of cold water. Cook until thickened, stirring constantly. Stir in lemon flavoring. Pour over dumplings. Bake at 350 degrees for 1 hour. Yield: 7 servings.

i you have a way to re-heat it at the office, fried apples is delightful and somewhat different. fry slices of apples in a generous amount of butter. when they soften a bit, add brown sugar & cinamon to taste. serve warm. goes great with pork roast or roasted chicken.
or, peel & core enough apples (johnathans work well for this) for everyone that's coming. put all the apples into a large baking dish, fill each core cavity with a pat of butter, a little salt, some brown sugar and some cinamon or nutmeg. bake at 350 for 45 minutes, until sauce forms in bottom of pan. glaze apples with pan sauce & bake for 5-10 minutes more until browned. serve warm.

Apples and either a Cheese fondue, you know melt some cheese in a flour mixed warmed on the stove, or just some good ole homemade Carmel yum yum... and if you dont' believe me on the cheese fondue try it it is REALLY good. We do it with bread, chicken, and apples

Apple and Lemon Custard Tart
Pastry for one-crust (9-inch) pie
3/4 cup sugar
1/3 cup butter or margarine, melted
3 large eggs
4 tablespoons lemon juice
2 tablespoons flour
2 Fuji apples, peeled, cored, and thinly
sliced
3 tablespoons apple jelly
1.) Heat oven to 425 degrees F. On lightly floured surface, roll out pastry to 11-inch round; line a 10-inch tart pan with pastry. Lightly ***** bottom with fork. Bake pastry 8 to 10 minutes or until lightly browned. Set aside.
2.) Reduce oven heat to 375 degrees F. In large bowl with electric mixer, beat sugar and butter until blended. Add eggs, one at a time, beating well after each addition. Beat in 3 tablespoons lemon juice and the flour. Pour batter into prepared tart shell. Arrange apple slices over egg mixture. Bake 20 to 25 minutes or until set.
3.) Meanwhile, prepare glaze for tart: In small saucepan, combine remaining tablespoon lemon juice and the apple jelly. Cook over low heat, stirring, until jelly melts. Spoon glaze over warm tart. Cool completely before serving.

Apple bread pudding
8 slices bread
4 Fuji apples
1/2 cup golden raisins
1 1/3 cup milk
5 large eggs
3/4 cup brown sugar
1/4 cup (1/2 stick) butter, melted
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1.) Heat oven to 350 degrees F. Lightly grease an 11 3/4- by 7 1/2-inch baking dish. Toast bread slices lightly and cut diagonally into quarters. Arrange a single layer of bread pieces in bottom of dish.
2.) Core and slice 1 apple; reserve. Core and dice remaining apples. Spread diced apples evenly over bread in dish; sprinkle raisins on top. Arrange remaining bread in two lengthwise rows over diced apples and raisins. Place reserved apple sliced between rows of bread.
3.) In large bowl, combine milk, eggs, 1/2 cup brown sugar, the butter, cinnamon, nutmeg, and salt; beat until well combined. Pour over bread and fruit; sprinkle top with remaining brown sugar and bake 40 to 45 minutes or until firm. Serve warm or cold.

crepes with apple filling, maybe sautee them up with a little butter, brown sugar, and cinnamon. yum!
