I'm using it in most of my recipes now instead of ground beef, but even though I'm using the same amount of spices, the recipes are turning out very bland. Do I need to increase the amount of spices? By how much?

Increase to taste! It's all trial and error. I eat a lot of turkey burgers and turkey chili, and I use a TON of extra spices. Jane's crazy mixed-up salt is a good one (premixed). Also chili powder, sea salt (the big granular kind), garlic salt/powder.

If you want to branch out a little, cumin and allspice make things pretty interesting.

Honestly I use ground turkey all the time, for burgers, chili, meatballs, tacos, etc. If you use ground turkey, and make sure it is not just ground turkey breast, so that there is not just white meat...most cannot tell the difference if you season it just like beef. Not even my Italian in-laws can with meatballs! However, just the ground breast needs seasoning salt, chicken boullion cubed ground up, garlic powder, even egg as it tends to be flavorless and dry.

Ground turkey is very bland...I would recommend adding salt and ground oregano. Try doubling the measurements... if it doesn't call for oregano then I'd add 1 teaspoon per patty (assuming you're making turkey burgers, adjust accordingly for meatballs and anything else).

My friend uses ground sage and poultry seasoning. It really adds a nice flavor. He uses 1/2 cup of poultry seasoning to every five pounds of turkey. And about a tablespoon of the sage.

Use beef, vegetable or chicken bullion to add some extra flavor to your ground turkey. I like to add onions and chopped garlic as well. But if that's not you, stick with the bullion. Enjoy!
