What goes good with it besides rice?

I start by using Carrol Shelby's seasoning pouch...it's makes for a good jumping off point for your flavoring. My hubby and I like it simple, yet spicy, using ground sirloin and kidney beans. There are a million variations on chilli, so it's a good idea to figure out what you like first, then experiment or find a recipe that fits your taste.

An awesome side for chili has alwaye been cornbread. You can even take a cheapy box, some buttermilk, shredded cheddar cheese, corn and chopped jalapanos and make yourself a darn yummy companion for your chili. If you're not a fan of cornbread, a nice chewy loaf of sourdough bread is really good also.

I too, use Carrol Shelby seasoning. Then I add crushed fresh tomato, tomato juice - from the fresh tomatoes - just cooked down to concentrate the flavors, 2 lbs fried ground beef, 1 lg. can kidney beans, 2 C diced bell pepper, and 1 large diced onion 1 T homemade HOT HOT crushed red pepper, salt & pepper. Throw it into the crock pot and let it cook for about 12 hours. Thicken it with some corn starch slurry. You're good to go.

I usually serve it with more hot sauce, shreadded cheese, and tortilla chips. Sometimes sour cream - if I've got it.

After making the chili I put Real mashed potatoes(not instant ones) into a casserole pan then add Peppers and other spice to taste layer of cheese then my cornbread mix poured on top then bake till cornbread is done

My dad adds unsweetened chocolate, kidney beans, and beef to his. It's really quite good. You should try it. He serves it with cornbread and rice.
