Something fairly simple and healthy. I don't mind using a little processed food as long as it's not loaded with sugars or trans fat. I'm cooking healthier but running out of ideas. Help?

Start the brown rice - or brown rice wild rice mixture first - as rice takes about 30 to 45 minutes to cook. Boil with about 1 tablespoon olive oil, add rice and cook/simmer for about 45 minutes.

Fry chopped onions, chopped celery, chopped carrots and then add chopped garlic at the end.
When this mixture has cooked for about 3-4 minutes, add the ground turkey and fry them together in about 1-2 tablespoons of olive oil.
Season - a little ground red pepper, ground parsley, black pepper & sea salt.
Serve over the rice. = great for cold weather.

My mom used to make this a lot. Beef Taco Bake 1 pound ground beef 1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup 1 cup Pace Thick & Chunky Salsa 1/2 cup milk 6 flour tortillas (8") or 8 corn tortillas (6"), cut into 1" pieces 1 cup shredded Cheddar cheese (4 ounces) In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2-quart shallow baking dish. Cover. Bake at 400°F for 30 minutes or until hot. Sprinkle with remaining cheese. Serves 4.

any traditional meatloaf recipe will work fine with the ground turkey. you may want to add some finely chopped mushrooms, since turkey needs the extra moisture and body those will provide. don't forget to add a little fat, since turkey is so lean - try a tablespoon or so of extra virgin olive oil.

meatballs will work fine as well (again, add a little olive oil and chopped mushrooms for taste, moisture, texture) and come out fluffier than the traditional beef/pork mix.

turkey burgers - add finely chopped mushrooms, onions, bell peppers and some Worcestershire sauce and you'll never miss the beef.

lastly, tacos or pasta sauce work great substituting turkey for the ground beef that is normally used. you won't be able to tell that you used turkey at all.

How about turkey chili? Tastes just as good as regular ground beef, with much less fat. Or try making turkey meatballs and some baked pasta, turkey stroganoff over pasta is good too, or maybe some lasagna, stuffed green peppers, or turkey tetrazinni ? Lots of ideas..just substitute anything you'd use ground hamburger in.

Ground Turkey Casserole

3 cups uncooked wide egg noodles
1/2 lb ground turkey
1 medium chopped onion
1 cup chopped broccoli
1 (15 ounce) can tomato sauce
1 teaspoon italian seasoning
2/3 cup nonfat dry milk powder
1/2 cup water
4 ounces cubed cream cheese
1 tablespoon minced fresh parsley
1 minced garlic clove
1 1/2 cups shredded part-skim mozzarella cheese

Steam broccoli until just tender 2-3 mins.
In large skillet, cook turkey& onion over medium heat; drain.
Mix in tomato sauce& Italian seasoning.
Bring to boil.
Reduce heat, cover& simmer for approx 10 mins.
In a separate saucepan, combine milk powder, water, cream cheese cubes, parsley& garlic.
Cook& stir over med heat until cream cheese is melted.
Drain Noodles, add to cream cheese mixture.
Put into an 8-in sq baking dish coated w/ nonstick cooking spray.
Mix broccoli into Turkey mixture and top noodles.
Sprinkle with mozzarella cheese.
Bake uncovered at 375 for 15-20 minutes or until cheese is melted.

Make turkey meatballs florentine!

Turkey
spinach
a little parmesean cheese
an egg
& italian bread crumbs

Mix, roll & bake at 400 degress for 20-25inutes...open up a ball & make sure its not pink on the inside.

Serve them with pasta sauce & pasta or plain on the side of something else, like a salad.

You can make the same things you would make with regular ground beef. You can make it with pasta, and meatballs, just bake the meatballs. For pasta sauce, not really a sauce. GEt some garlic, tomatoes, basil, parmesan, oregano, rosemary, pepper and a little salt, add that to pasta, then add your meatballs.
