You can bake your bread in any type pan you have. The cooking time will probability have to be adjusted so keep a close eye on it
I would not use a cookie sheet. you can even use a casserole. as long as it has deep sides so your bead can raise.

You can use almost any pan but cooking times will vary depending on the thickness of the bread. Lower the oven temperature for thinner layers.

There are other things you can use as well. Try an empty coffee can or a clay flower pot. Both work well.

I have baked things in tin cans. Metal coffee cans to be exact and metal juice cans. When they are baked and cooled you can cut the bottom of the can out and slide the bread out slicing as you go. I had a recipe that called for a coffee can to be used as the baking pan and it does work.

You can use any kind of baking pan or loaf pan. I like to buy those aluminum disposable pans and that way I can give them away already in a pan. No mess to clean up either.

if u plan on using a 9x13 inch pan, i would cut cooking time by at least 5 to 7 minutes, for a total of approx. 25 mins, and keep your eye on it during the final 5 mins it should be fine.

when i make a banana cake (recipe in link) i bake in a 9x13 for 25 mins in a 375 degree oven
