I have his book which the recipe is in but as we are n the middle of moving it has been packed away in storage. I know that you can't print the actual recipe due to copyright but can anyone give me a general idea of what to do ?

I can't find the one you asked for on the bbc food website but there are many other food recipies on the website by TV chefs which use roast pork, just go to www.bbc.co.uk/food and use the search recipies option, sorry i couldn't be more helpful x

When the Chinese cook "Siu Yuk" Roasted Portk, they use a long thin knife to loosely separate the skin from the meat before roasting the pig, which causes the skin to virtually fry from the fat between the skin and the meat. (by loosely, I mean do not totally remove the skin so that it completely falls off.)
