I don't know the most stolen, but I've learned that the most important book stolen ever was the Comedy from Aristotle.
It discussed the humorous part gods have. Guess why it was not a book to be read by the common people. It would explain why religions are afraid of having humorous/hilarious/funny episodes involving powerful characters.

Do you mean a book that's been stolen from it's owner the most, or the book with the most plagerized content?

For both I'd say the bible. Those guys totally ripped god off on that stuff.
