I am trying to make scallopped patatoes, but don't know how to make them. I want to make them with Meatloaf and corn on the cobb for my fiance's family? Do you think this will be good? Let me know if you have receipts on how to make both of these (i need something easy and quick). Thanks.

I personally wouldnt serve a scalloped potato WITH ham AND meatloaf. You could make plain scalloped potatos and the meatloaf. I just think 2 meats would be a bit much. Here's an easy recipe for the potatoes.
Potatos, about 6 medium sized
Butter, about 3 tablespoons
Milk, 1-1/4 cups
Flour, about 3 tablespoons (potato flour works)
Salt, 1 tsp
Paprika, 1/4 tsp
Grated Cheddar Cheese
Peel potatos. If you are doing a big batch, store under water. The quantities listed are for a 10" square baking pan. Obviously, it scales.
Slice potatos thinly.

Butter pan and preheat oven to 350F.
Place 1/3 of the potato slices in a layer in the pan. The slices should overlap considerably.
Cut the butter into pads about 1/4" thick, then cut them in quarters. Place about six of these pieces spread across the layer. Sprinkle with 1 tb of flour.
Repeat for two more layers.
Heat the milk until just below boiling; add the paprika and salt and stir. Pour the milk over the pototos; it should dissolve the flour on the top layer.
Bake for 60 minutes. Remove from oven and cover with a course layer of grated cheese. Bake for another 30 minutes

I think that you should leave the ham out if you are making meatloaf and just have scalloped potatoes.

Scalloped ham and potatoes are more of a main dish.

This is what I would serve:
A green salad

Meatloaf
Mashed potatoes (any variation)
Steamed green beans (the fresh ones)
Dinner rolls(you can buy them frozen let rise and bake)close to homemade.

Corn would be fine but I don't really think it goes together. Honestly I would make something tried and true that I'm comfortable with.

Here's a really good meatloaf recipe that I recommend highly.

Old-fashioned Meat Loaf- A.K.A "Basic" Meatloaf

Recipe courtesy Paula Deen

Old-fashioned Meat Loaf- A.K.A
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Some alternative potato recipes because I think scalloped potatoes will be too rich w/ meatloaf.

Mashed Potatoes

2 pounds russet potatoes (about 4 medium), whole, scrubbed
1 teaspoon kosher salt, plus more as needed
1/4 cup unsalted butter
3/4 cup whole milk
Freshly grated nutmeg (optional)
Freshly ground black or white pepper

In a large saucepan, combine the potatoes, 1 teaspoon salt, and enough cold water to cover. Bring to a boil over high heat. Do not cover. Lower the heat to maintain a simmer and cook until fork tender, about 45 minutes.

Drain the potatoes and return them to the pan. Swirl the pan over medium heat until the skins are dry, about 1 minute. Halve the potatoes crosswise. Put the halves in a ricer cut-side down and press the potato through the ricer into a bowl. The flesh should easily pass through the holes and the skins remain in the ricer. Discard the skin, and repeat with the remaining potatoes. (Alternatively, peel the cooked potatoes and put through a food mill or mash with a hand-held potato masher.)

Heat the butter and milk in the saucepan over medium-high heat until hot but not boiling. Add the nutmeg, if desired, stir into the potatoes. Season with salt and pepper, to taste. Serve immediately.

For Variations:
Add:
Prepared horseradish
Blue cheese
Roasted garlic
Chopped fresh herbs
Prepared pesto
Real bits of bacon
Use olive oil instead of butter
Prepared wasabi


Cottage Potatoes - Recipe courtesy Paula Deen

3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika

Preheat the oven to 350 degrees F.

Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Corn on the cob is out of season - peas, asparagus, green beans or tossed green salad would make good alternatives.

I get compliments on my scalloped potatoes and ham...And its easy:
Slice desired amount of potatoes in a roaster
Add:1 can cream of celery soup
1 can cream of mushroom soup
1 can french onion soup
About 1 1/2 can of milk
I buy a ham steak and cut it in cubes....Bake about 1 1/2 hours on 375 or until potatoes are tender....With meatloaf and corn of the cob, sounds yummy to me!
