It is the court system that decides where a case is to be heard. Unfortunately, the location can only be changed in very exceptional circumstances

I'm afraid not. Courts only have jurisdiction over specific geographical areas. If the offence was committed in North Wales, then that's where the case must call, and not in a court local to you.
If 3 or more points are going to be added to your license, you will have to attend court, as under the 'totting up' provisions you will be disqualified from driving, and that is something a court wont do in your absence. Obviously, you'll be well advised not to drive yourself to that court appearance.
Sorry the answer isn't what you want to hear, but that is the law.

You can plead guilty be letter, but depending on which court gives you the points which finally tots you up, you will have to appear for sentencing.

I'm afraid you won't have a choice, you'll be summoned to the court the court system selects, and it's usually where you commit the (alleged) offence.

I Think you have to go to the court you are summoned to unless you can plead by letter but I think you can only do this if you plead guilty

I don't think so, I would ask your boss to do you a letter telling them your out of a job if you lose your licence, it worked for a mate of mine.
