Pineapple Rice Pudding
INGREDIENTS
4 cups milk, divided
3 cups cooked long-grain rice
2/3 cup sugar
1/2 teaspoon salt
1 (3 ounce) package cream cheese, softened
2 eggs
1 teaspoon vanilla extract
PINEAPPLE SAUCE:
1 (20 ounce) can pineapple chunks
1/4 cup packed brown sugar
1 tablespoon cornstarch
1 tablespoon butter or margarine
1/8 teaspoon salt
1/2 teaspoon vanilla extract
DIRECTIONS
In a saucepan, combine 3-1/2 cups milk, rice, sugar and salt; bring to a boil over medium heat. Cook for 15 minutes or until thick and creamy, stirring occasionally. In a mixing bowl, beat the cream cheese. Beat in eggs and remaining milk. Stir into rice mixture. Cook and stir for 2 minutes over medium heat until mixture reaches 160 degrees F. Stir in vanilla. Spoon into six dessert dishes.
Drain pineapple, reserving the juice; set the pineapple aside. In a saucepan, combine brown sugar, cornstarch, butter, salt and reserved pineapple juice. bring to a boil; cook and stir for 2 minutes or until thickened. Stir in vanilla and pineapple. Spoon over pudding.

Caramelized Pineapple:
Serves 4
2 tablespoons butter
1 pineapple, peeled, cored, and sliced into eight wedges
1/2 cup sugar
2 tablespoons water or dark rum (optional)
Vanilla ice cream or frozen yogurt, (optional) for serving
1. Heat butter in a large nonstick skillet over high heat. Place pineapple in a large bowl. Add sugar, and toss to coat. Place in hot pan. Cook, turning once and shaking pan often, until golden brown, 10 to 15 minutes. Remove pineapple.
2. If necessary, stir water or rum into pan to thin sauce, and heat briefly; drizzle over pineapple. Serve with ice cream if desired

Pineapple pie recipe
INGREDIENTS:
1/2 cup butter or margarine
3/4 cup flour
1/2 cup flaked coconut
2 tablespoons brown sugar
.
Filling:
8 ounces cream cheese, room temperature
1/3 cup frozen orange juice concentrate, thawed
1 can (14) ounces sweetened condensed milk
1 cup crushed pineapple, about half of a 20-ounce can
lightly sweetened whipped cream or whipped topping
PREPARATION:
In medium saucepan melt butter over low heat. Stir in flour, coconut and brown sugar. Cook, stirring constantly, until deep golden brown. With a spoon, press hot mixture into a 9-inch pie pan. Set aside to cool while preparing filling.
In large mixing bowl, combine cream cheese, orange juice concentrate, and sweetened condensed milk; beat until smooth and well blended.
Stir in well-drained pineapple; spoon into crust layer. Chill pineapple pie thoroughly. Serve this pineapple pie with whipped cream or whipped topping.

1 CUP NONDAIRY WHIPPED TOPPING, THAWED
1 (9 INCH) READY-MADE GRAHAM CRACKER CRUST
DRAIN PINEAPPLE WELL; RESERVE JUICE
COMBINE RESERVED JUICE WITH PINEAPPLE JUICE IN MEASURING CUP. ADD WATER TO MAKE 2 CUPS. COMBINE JUICE MIXTURE AND GELATIN IN SAUCEPAN. LET STAND 1 MIN.
STIR OVER LOW HEAT UNTIL COMPLETELY DISSOLVED. STIR IN SUGAR. POUR INTO BOWL. CHILL JUST UNTIL STARTS TO GEL, ABOUT 1 HR.
FOLD IN PINEAPPLE, PUMPKIN AND WHIPPED TOPPING. POUR INTO GRAHAM CRACKER CRUST. CHILL 4 HRS OR OVERNIGHT.
