Because when you think of Mexicans and then you think of Mexican food, the very first thing that comes to mind is tacos. Like when you think of Chinesee or Japanesee people, many right away think of rice and noodles, and the list can go on and on...

This question seems to be stereotyping U.S. people as stereotyping everyone else....sorry, but had to point that out.
I don't know anyone who thinks all Mexicans like tacos (except maybe a few racist pinheads....). If your question is, "Why do all Mexican and Tex-Mex restaurants in the U.S. have tacos when most Mexicans don't eat tacos...", it is because that happens to be a favorite of the U.S. people.
Walk into any oriental restaurant in the midwest of the U.S., and you'll find something called "Crab Rangoon". It is purely a United States invention, and they serve it because we like it, while the truth is, Lactose Intolerance is almost universal among orientals. (And no, that last statement is not a stereotype...I got it from scientific data.)

When I went to school......I was taught not to use the words ALL, Always, Never, etc. when talking about peoples views or opinions on something. I don't think ALL Mexicans like tacos. It's a common Mexican dish. Nothing more, nothing less.

Hmm. You don't like tacos. You find sombreros and pinatas offensive in another "question". Either you are pretending to be Mexican, or you are a coconut who is ashamed of the products of your culture. That's too bad. I like tacos, burritos, fried chicken, watermelon, corn, and Thanksgiving dinner.
This has nothing to do with immigration, and Mexicans can feel free to be known for eating nothing if it is less stereotypical, as long as they stay in Mexico.

I don't know or care if mexicans like tacos so not all Americans think that they do. I don't think there are too many who care one way or the other. Not a real pressing point with us Americans.

I've lived with and around Mexicans all my life, and have never known one who didn't like tacos, but their tacos are not the same as Taco Bell's tacos.
Their tacos are on soft tortillas and are not filled with ground hamburger. They usually use two corn tortillas.

because tacos are good how about a steak taco with refried beans guacamole and some tender onions on the grill or some chicken tacos with mushroms and some fresh lettuce on the side with home made red sauce if you eat some real tacos you will find out that there is more that noddles on a foam cup or maccarrony and chese oops i almost forgot maccdonals and its carboard tasting burgers GOT TACOS

because some are not open minded and they go around thinking that every mexican looks a certain way, acts a certain way, talks a certain way...the list goes on and on....I'm Mexican and I probably love chinese food more than anything...Its like people in the U.S thinking that Taco Bell is authentic...it may be good but NOT authentic
