INGREDIENTS:
2 cans (14.5 ounces each) diced tomatoes
1 can (4 ounces) diced green chiles
1/4 cup thinly sliced green onion
1/4 cup chopped fresh parsley or cilantro
2 tablespoons lemon or lime juice
1/8 teaspoon pepper
1 clove garlic, minced
1/4 teaspoon salt, or to taste
PREPARATION:
Drain tomatoes, reserving only 1/4 cup of the juice. Combine tomatoes and juice with remaining ingredients; cover and chill at least 4 hours. Serve with tortilla chips.

INGREDIENTS:
1 tablespoon plus 1/4 cup oil
2 (4 ounce) cans chopped green chile peppers
1 large clove garlic, crushed and minced
1 large can (28 ounces) tomatoes, drained, reserve juice
2 cups chopped onions (2 large onions)
2 teaspoons salt
1/2 teaspoon oregano
3 cups cooked shredded chicken
2 cups sour cream
2 cups shredded Cheddar cheese
15 corn tortillas
PREPARATION:
In a skillet over medium-high heat, heat 1 tablespoon oil. Add the chile peppers and garlic; sauté until garlic is soft but not browned. Break up tomatoes and add to chile peppers along with the chopped onions, 1 tsp salt, oregano and 1/2 cup of the reserved tomato liquid. Simmer uncovered until thick, about 30 minutes.
If it thickens too quickly, add a little more of the tomato liquid or a little water, if necessary. Remove tomato sauce from heat and set aside.
In a bowl, combine chicken, sour cream, and shredded cheese. Heat 1/3 cup oil in a skillet over medium-high heat until hot. Using tongs, dip tortillas in hot oil for a few seconds, just until they become limp. Drain the tortillas well on paper towels. Fill tortillas with chicken mixture. Roll up and arrange side by side, seam-side down, in a 9x13x2-inch baking dish.
Pour tomato sauce over enchiladas and bake at 350° until heated through, about 20 minutes. This casserole can be frozen then reheated in the oven until hot.
Serves 6.

Brown meat, onions and garlic. Drain. Add remaining ingredients except tortillas and cheese. Simmer for 5 minutes. Pour a small amount of the mixture into the bottom of a slow cooker. Next add a tortilla and top it with a small amount of grated cheese
Continue to layer the mixture with a tortilla and cheese until all ingredients are used. Cook on low 3 to 4 hours

Consider that he might NOT want to eat the kind of food he eats everyday. Maybe he wants to eat "American" food, for a change.
But, I'll still give you a recipe anyway.
Green Chili Stew:
2 medium potatoes, peeled and cut into bite-size pieces
1 14 to 16 oz can diced tomatoes
1 or 2 cloves minced garlic
1 medium onion, quartered and sliced
1 cup diced green chilie (Anaheim or Hatch, hot, for your friend)
1 pound ground beef
3 tablespoon flour
2 cup water
1 tablespoon oil
salt & pepper
If you use fresh Anaheim or Hatch green chile, you must first roast it on an open flame (gas grill, or gas stovetop) and almost burn off the waxy coating so you can peel it off. Then open the chile and remove most of the seeds and stem, then dice it up. Or in some areas you can buy frozen diced, or canned chilies.
In a crock pot or large pot add the tomatoes, water, potatoes, and chiles. Heat to a boil while cooking the meat and onions.
In a skillet, saute the onion slices oil on medium heat for about 3 minutes. Add the diced garlic and continue to cook until the onion starts to turn clear. Add the ground beef and sprinke the flour on the meat as it browns.
When the liquid in the pot boils, add the meat and onions. scrape out all the flour from the skillet . Stir until the liquid starts to thicken, then reduce the heat to a simmer. Cook until the potatoes are tender.
Serve with flour tortillas.

in Mexico like here the food varies by the region. he probably eats Mexican food from there all the time maybe you could make a dish that is common to your area & if he likes it hot you could prepare a couple of hot salsas on the side. a fresh salsa that we make goes like this; either dice or in a food processor 2 garlic cloves, 1 small white onion or yellow onion a few pieces of cilantro, & 2 jalepenos & maybe 2 yellow (hueritos) (if dicing by hand maybe use gloves to cut the chilis) & 2 medium tomatoes(if using food processor I like to do the tomatoes by hand they tend to squish in the processor) some salt, pepper & a squeeze of lemon. a saucy one is 1 can of diced tomatoes, 1 clove gatlic, 2 green onions, 3 or 4 if using a big can of tomato, a pinch of oregano a few pieces of cilantro & put that in the food processor for the chili, we like to use chili tepins if you like take out some salsa for your self & add the chili tepinis to the fook processor

If I were you I certainly would not try to cook him something that comes from his country !!!Without being impolite you would probably not do it "as well" as he is used to have it.
Be safe and prepare him something spicy but from were you live !!
