Because it makes for a convenient straw man to knock down. If you use the more actual views, then atheists are harder to attack or discredit.

Generally, stereotypes are much easier to deal with than having to actually do research and learn things. We humans enjoy nice simple "Us vs Them" dyads. There is a section of the brain that divides things into polar opposites upon our perceiving them. This is a sort of precursor to the "fight or flee" response. It makes decision-making a much faster process than all that laborious thinking would do.
One of the reasons that the "atheist/Christian" debate is much more prevalent than discussions about agnosticism is that it is difficult to find a polar opposite to living in the question.

For the same reason that others continue to cast all religious people, gay people, minorities, or whoever in the same light. They haven't been shown any better, and if they have, they're too wrapped up in the defensive fear that those different from them will somehow hurt them, to change their mind. Stereotypes are stupid.

Ignorance isn't dead yet. That, and they want to reinforce the nonsensical belief that they are somehow superior to those with this belief. Unfortunately, this creates people that think they are justified in doing some pretty awful things. The information age is destroying the ignorant superstitions of the past - just not fast enough.

The only way to keep a population engaged in an extended war is to demonize the enemy in one way or another (usually many).
Theists are at war with the truth. Atheists are at war for the truth.
It's been a very long war. Thankfully though, we're starting to win finally.
It's only a matter of time before those evil, vile, disgusting non-humans who call themselves 'theists' will be trampled under our feet. Did you know they eat their own children? I heard it happened in Ireland once. Quite the immodest proposal, don't you think?

Atheism will eventually be the down fall for religion. All the religious leaders will lose their simple and cushy well paying jobs. To delay this fact those leaders preach hate and lays about Atheism.

Because they don't think they are false.
They've had a bad experience with an Atheist.
They are rebelling against Atheism!!
They've hardened their hearts to the natural world.

Because they are angry and annoyed that they can’t convert you. They thought it was going to be easier. They never took into account that we really think we are right deep down. When they realize that, they let out their frustrations the same way a lot of people do. They hurl insults and slurs. Christians are not immune to bigotry, that’s for certain.
