Truffles, chanterelles -- I've been reading up and can't imagine actually being able to start up a business with any success. Tips from anyone who raises edible mushrooms and turns a profit?

I actually was thinking of the same thing. After much research, I thought it looked viable, but very difficult. The main thing that I found is that the most important part is the composting, which is an extremely specific, complex, scientific, and time-consuming process.

Honestly, once I found out it was even possible to cultivate truffles, I was amazed and wondered why this doesn't happen more. After the research, though, I got my answer.

One of my best friends' Mom used to work in Mushroom cultivation and she pointed out that you need a good, solid team of scientists and mycologists to make anything happen. That is certainly not a cheap staff!

Impossible to raise truffles in any other area outside of central France for the black truffles and Piedmont, Italy for the white truffles. The earth in those regions supply the truffle with its pugnent peppery flavor. Same holds true for Champagne. The earth in the Champagne region has a certain amount of limestone that gives Champagne its unique taste. If you want to raise mushrooms, you should try Portobello mushrooms. Those are grown in greenhouses. Many of those are in Pennsylvania.
