you can make baked pasta or rice, just some normal pasta sauce and add 3 eggs for every 5 portions, bake till golden brown

if you have time to make meat balls, it will be great. just 2 types of minced meat, add loads of herbs such as parsly, onions, salt, pepper, eggs, milk soaked bread, and garlic.
it forms like a dough, split them so that you have 5 for each person, don t make them that big, roll them in breadcrumbs and fry them lightly. you can finish them off in the oven. serve them on some nice salad

if you can find quark, use quark and some cherry jam, and apple mouse.

alternate the quark, jam and apple mouse. the last layer should be quark, so that you can add some amaretto and maybe a buiscut in it too.

How about making pizza? You can buy the bases or use pitta bread or french sticks/baguettes. Just use a basic tomato sauce for the base & everyone can pick their own toppings (without cheese if they want to lose the fat). Then bake them in the oven.

Rough chop some potatoes, brush them with olive oil & stick them in the oven for low-fat wedgies. Natural yoghurt/creme fraiche makes a quick low fat dip (add some mint or mustard for a kick)

I always find a roast (joint of meat, veg, potatoes & gravy) the easiest thing when I'm busy as it doesn't need much looking after.

Don't forget to let us know what you cook!

All the best.x

How about Chili dogs and Chili burgers with some nice melted cheese on them. You can make the chili or buy canned or frozen for these dishes as the chili isn't the main dish. Or maybe Ruebens, get some thickly cut pastrami, swiss cheese, sauerkraut, Russian dressing and rye or pumpernickel bread. For a side dish if you feel you need one, either oven baked fries or potato salad.

Here are a few ideas:
burgers/vegeburgers & chips & salad
Grilled chicken breasts with rice & veggies
Egg fried rice (stir fry) - the secret is to stir fry your veggies of choice (courgettes, carrots, spinach, onion and garlic - and meat if you like) and THEN add the egg. Then add the cooked rice and stir fry 3-4 mins - splash in some soy sauce. mmmmmmm...

Make brown rice and vegetables cajun-style. All you'll need to give it flavor is cajun seasoning and olive oil, which is healthy for you and a 'good' fat. You can buy the seasoning anywhere, even Wal-Mart.
