It does freeze if you get the temperature down low enough but the freezing point of alcohol is a lot lower than water, which is why alcohol is used in thermometers. The alcohol content will determine what the freezing point is of different wine, beer, liquors, etc. The lower the alcohol content (e.g. beer at 4 or 5%) will freeze a lot quicker than scotch, gin, rum, vodka, rye, etc. which typically has an alcohol content of 40% with wine in the middle between 11 and 14%.

It lacks a lot of water content, which would cause it to easily freeze. And if you had a high alcohol content in warmer temperatures, you would notice condensation inside the bottle. Thus you know when the bar is watering down the liquor.

they do freeze. there freezing point however, is at -117 degrees celsius, whereas waters freezing point is at 0 degrees.
