I was married at Sandals Montego Bay this past November. The wedding, reception and honeymoon cost approximately $15,000. We stayed 10 days total and had 20 guests (guests paid for their flights and hotel). Some stayed off the resort so we had to pay $85 pp for day passes to allow them on the resort property. Sandals did an excellent job but I would not recommend the Montego Bay Resort. It is right across from the airport, they are doing renovations on 2 of the restaurants, and the pools are old. I hear Negril and the Whitehouse are supposed to be great.
Once you decide to go with Sandals, you will be in contact with a wedding coordinator to help you plan (she is not on-site). You will pick your wedding package and put deposits down on everything (photographer, band, reception, etc). We did a 1 hour wedding reception with a D.J and we picked the $1200 photo package (the photographer took 170 pictures and you get to pick your favorites, we ended up buying extra pictures before we left). We were very satisfied. TIP: you can ask a guest to videotape the wedding instead of paying for the videographer.
When you arrive, you meet with your on-site wedding coordinator. This appt. takes approximately 2 hours and you go over every detail (location, decor, flowers, music, etc). Be prepared to spend some more money. TIP: Ask for fresh flowers. Bring a list of guests - include their relationship to you so she knows where to seat them. We didn't get to meet the minister until 5 minutes before the wedding - he visited with my husband first and then with me. We chose pre-recorded music for the ceremony, it sounded great (I was a little worried). The ceremony lasted approx. 20 minutes, we then signed the marriage license, took some professional pictures, and then went to the reception. After the reception, we took some more professional pictures on the beach and around the resort. Overall, the wedding was perfect. The next day, you can go look at the professional pictures and choose which ones you want. They put them on a disc and in albums for you.

Avoid the Runaway Bay hotel, I did not get married there but saw several weddings that took place, and I felt sorry for the couples, it was tacky beyond belief and the minister waffled on for ages and ages while the guests wilted in the sun.
I have heard Sandals is very good, ultra all inclusive, but avoid the one that is right next to the airport as I am sure that will be noisy.

I was married at a Sandals Resort this past November. Our wedding was at 4pm and the reception at 5. By 7pm, the reception was over and my husband and I got a start on our honeymoon. I would definitely have a reception after the ceremony but after that... you two should go back to your suite. You will be ready to have some privacy and your guests will be ready to do their own thing. I was really worried about keeping my guests entertained. Seriously, don't worry about it. Plan some group dinners and an activity or two (snorkeling, shopping trip, etc.). Have a reception after your ceremony and thats it. Your guests are going to want to do their own thing. *Don't plan an activity on your wedding day. Your going to need all the time in the world to get prepared.

Sandal offers a nice and inexpensive package, if you stay there at least 7 days they give you a free wedding.

Call them and ask them how eco friendly they are.... this will let you know if they are running sewage right into the water your swimming in. I heard Sandals is very eco friendly. I stayed at a hilton and it was a dirty hell hole..... sewage ran right into the water... food was filthy... drinks water down.
Ask all of them about how eco friendly they are and if they filter the water.
