I'm remodeling my bathrooms and want to replace the shower/tub faucet & control. I currently have Delta with pressure balance. If I wanted to change that to a Moen, do I have to change the pressure valve as well or can I use the existing one?

Yes. Most plumbing fixtures are not interchangable. Even staying within the same manufactor with a different model can force you to change valves.

Not sure of the models you have but suffice to say; you should be able to change out JUST the control IF the pressure valve is separate and found "down the pipe run" (or "up") from the control.
