use extra virgin olive oil just about every day. But there's one thing I don't use it for, and that's cooking. For good reason. When most edible oils (including olive oil) are heated, the oil is damaged and the fats are oxidized. This changes the chemical structure of the oil and can contribute to the development of disease.
Cooking with vegetable oils is even worse. These oils - soy, corn, safflower, sunflower, and canola - are particularly susceptible to heat damage. They're also loaded with omega-6 fatty acids, which have been shown to promote heart disease, inflammation, and cancer.
So what should you cook with? Go for an oil that's stable when heated, especially if you're cooking at high temperatures (as when frying). I'm talking about coconut oil. Not only is it the healthiest oil to cook with but, over the last 75 years, researchers have found that people who naturally eat a lot of coconut oil (including Polynesians and other island cultures) have low body fat and a low incidence of heart disease.

I'd agree with everyone else, olive oil is by far the healthiest.
Virgin or Extra Virgin is even better.
Olive oil has "good fats" in it but if you're looking for the lowest fat content possible then there are olive oil sprays available. Or someone told me if you just buy a plastic spray bottle and mix 1 part olive oil with 3 parts water it's good.
Olive oil is good for the heart and general health.

Olive oil is the most healthy oil to cook with. I use it regularly to cook with. However having said this, each tablespoon of olive oil still contains 135 calories (Tesco Live Oil). I sometimes use 'Fry Light Sunflower Oil Spray', (available from Tesco) each spray contains just one calorie. It is not quite the same, but I find for things like roast potatoes or potato wedges etc it is just fine.

Pretty much everyone believes it to be olive oil. This is only partially true! Rape seed oil is much healthier than extra virgin since it contains only 7% saturated fat compared to 14% for olive oil. And it's produced in the UK so you're also saving air miles or food miles or whatever they're called!

reserchers say that olive oil is the best, but the truth is that once you heat oil, no matter what kind it turns into bad fat. so it doesn't really matter what oil you use, its how you use it. anything with the stamp of the heart foundation is also very good because its been made specially for people with heart problems, but its good for anybody
