Here is some recipes

Cornbread Bowl for Chili

Dough:
1 T. sugar
1 C. warm water (110 degrees)
1 envelope yeast
2 1/4 C. flour
1 C. cornmeal
1 t. salt
1/4 C. olive oil

Add yeast, sugar and 1/4 C. of the water to a small bowl and let set 5 minutes. Yeast should start to bubble.

Add flour, cornmeal, salt, oil and the rest of water along with yeast mixture and mix well. Turn out onto a floured board and knead dough until smooth and satiny. (about 10 minutes) Let rise until doubled.

Divide into 4 pieces. Shape into rounds and place on greased cookie sheet sprinkled with cornmeal. Let rise until doubled.

Bake at 400°F. about 20 minutes until golden brown and when you tap on them they sound hollow inside. These rolls should be baked the day you intend to use them.

CORN BREAD

There are many versions of corn bread. This one is sometimes called Yankee Corn Bread.

Preparation Time: 10 minutes
Bake: 400 degrees
Bake time: 25 minutes

Ingredients:
1 cup milk
1/4 cup butter or stick margarine, melted*
1 large egg
1 1/4 cups yellow, white or blue cornmeal
1 cup all-purpose flour**
½ cup sugar
1 tablespoon baking powder
1/2 teaspoon salt

Methods:
1. Heat oven to 400 degrees. Grease bottom and side of round pan, 9 x 1 1/2 inches, or square pan, 8 x 8 x 2 inches, with shortening.

2. Beat milk, butter, and egg in large bowl with hand beater or wire whisk. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Pour into pan.

3. Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean. Serve warm if desired.

* Spreads with at least 65% vegetable oil can be used.

** If using self-rising flour, omit baking powder and salt.


For Corn Muffins:
Grease bottoms only of 12 medium muffin cups, 2 1/2 x 1 1/4 inches, with shortening or line with paper baking cups. Fill cups about 3/4 full.

I had cornbread last night....with a big bowl of homemade vegetable beef soup. Cornbread is great with hearty soups and stews, too--love it with chili. As a true southerner, cornbread can be served in place of rolls or biscuits for any meal. It is commonly found with foods that have juice or broth....turnip greens, cabbage, beans, stewed tomatoes, etc. Make sure you serve it warm with plenty of butter for optimal flavor!! Ham & beans is a good main dish but my kids love to eat cornbread for breakfast with butter & grape jelly. I also fry up potatoes and onions with the ham & beans. It is really good!

Most people in the south have beans. If you really like cornbread though, you can eat with most anything, especially fowl.
