Try this its really quick and easy. You don't need eggs, or an Ice Cream Machine.

Quick Stawberry Ice Cream

1 (Supermarket) Punnet Strawberries (Hulled)
1 Large Carton Double Cream
Icing Sugar (to taste)

Puree strawberries and icing sugar together to taste in a blender or food processor.

Whip double cream until it resembles firm soft peak stage.
Fold in the strawberries mixture.

Sweeten again with icing sugar if needed

Place in plasic freezer container with good fitting lid.

No need to re-whip or mix.

Remove from freezer about 5-10 minutes before serving

Whipping cream can also be used for this, but be careful not to over whip (you don't want the cottage cheese appearence).

You are looking for the cream to to be a soft (piping) consistency.

Try this with other fruits or simply with a fresh vanilla pod.

You don't want a very large tray of strawberries, just a regular punnet but then again experiment and use what works for you.

I do not have a recipe per se, but I do have a method for making ice cream without a machine. When I taught preschool we used to make ice cream using 2 coffee cans, one a small one pound can, the other a larger 3 or 5 lb can. You fill the small can 3/4 full with the ice cream mix. Put the lid on the can. Place the small can in the larger can. Then pack ice and rock salt around the small can. Put a lid on the larger can and roll it back and forth with your foot. (We used to have the kids roll it back and forth to each other) The can gets very cold. Frost forms on the outside. It usually takes about 15 minutes or so for the ice cream to form. I have used this from time to time to make diet ice cream for myself.

1 gallon size Ziploc bag
1 sandwich Ziploc bag
heavy whipping cream
sugar
vanilla
ice
salt

Put ice into the gallon sized Ziploc bag and pour some salt over it this will start the ice to melt.
Pour some heavy whipping cream, sugar, and a little bit of vanilla into the sandwich bag. Zip it completely closed and place it inside the gallon sized bag.
Close the gallon sized bag and start shaking around in about 5-10 mins you will have a wonderful ice cream.

the other night i saw a recipe on paula deen's show. All she did was pour sweetened condensed milk and a little vanilla over shaved ice ( but she said she's also done it over snow), and folded it together. I have no idea how it tastes but its definitely an intruiging idea

250 g fresh (or frozen strawberries)
1 ½ dl sugar
1 tablespoon lemon juice
2 dl whipping cream
1 dl milk

Mash strawberries and combine ingredients thoroughly. Freeze the old-fashioned way.
