take two or three onions, 3tomatoes and chop them finely.
fry the onioons in some oil and ghee till transparent and add the finely chopped tomatoes. fry well till oil leaves the sides of the pan. mash it well and keep aside . add finely chopped veg, some ground ginger chilly paste , spicy powder, like coriander, cummins seed powder, mix and pressure cook. serve hot--this is very fast and reasonably tasty.add fresh coriander without fail.

Sweetie,this is really good:
In an oven safe pan,slow oven roast vegetables of your choice.Some of my favorites include eggplant,squash,and zucchini.Slice or chunk them.Drizzle with extra virgin olive oil and seasoning of your choice put them in a 325-350 degree oven until caramelized.Once the vegetables are tender,and got a nice color to them,take them out of the pan with a slotted spoon.Leaving behind the juices from cooking.This will be your basic "liquid" or "flavoring".Put liquid off to side,in a sauce pan met 2 tbsp of butter.Once the butter melts add 2tbsp of flour.Take your roux to the desired stage making sure to cook out the "Raw flour" taste,and add the reserved liquid.Stir until desired consistancy.You will need to add water,cream,milk to thin out the consistancy..You can use this over mashed patatoes,you can use this over your vegetables.It is good,but make sure you season your vegetables well or your gravy will be bland.Good luck hun and have a good day.

Boiled potatoes no.1med. size(peeled & diced)
some seasonal semi boil veg like frenchbeans,carrot,cauliflower (drain water as stock)
1 bunched spinach(blanced)
1 med.size sliced onion,2 pod sliced garlic,cumin seed,nutmeg pd. 1 pinch
1 diced tomatoes
salt to taste.
Grind potatoes & spinach to make a paste,in a nonstick pan put 2tsp.oil or butter(I prefere butter),add cumin seed,when going to colour change add garlic and then add onions when transperent add tomatoes,stir until well cooked,now add spinach paste&veg, srir well,now u can add veg. stock,cover it for some time.when veg will be soft add salt (1 tsp.sugar to be added),nut meg.
Serve with bread or rice or pasta.

ok to start with heat oil in a kadai 1 or 2tbsP.add half tsP cumin seed,saute add 2 choPPed onions,garlic(oPtional},gingerand green chilli(1}.saute till onion becomes golden brown.add 1tsP corriander Powder,half sPoon each of turmeric Pdr,chilli Pdr,kasuri methi and garam masala.add 1 or 2 choPPed tomatoes and salt to taste.u can add cashew Paste(oPtional} now u can add Potatoes or mixed veg of your choice or mixed dal , kabuli channa , rajma or soya bean.in short anything of your choice and Pressure cook.finally garnish with corriander and cream(oPtional}.

Mix some gravy base, plain flour and the water / juice from your cooking.
Mix the flour into a watery paste in a cup, before adding and stir thoroughly.
You may need to add vegetable / plain salt to taste.

first you boil potatoes and smash it.then you take scraped coconut,big jeera,cloves,khus khus and grind it.then you take a pan,heat oil in that,put onions,green chillies,tomato,then put the smashed potato,then grinded thing put some water,put salt,then leave for five minutes,then get it down.
