Nothing in Open this time of morning and I had a party saturday. some foods I have in the fridge are frozen solid. So I just wanted to make a quick treat. With the Following things I have on hand.

1)Enriched Flour (Self Rising)
2)Butter
3)Eggs
4)White Sugar
5)Vanilla
6)Baking Soda
7)Cinnamon

So, what can I make with the things above?

Snickerdoodles!(Scrap the baking soda and cream of tartar because your flour is self-raising), and use all butter instead of half butter, half shortening...these are really yummy!!!!!

INGREDIENTS
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

Here are two simple recipes you might like:

EASY ROLL-OUT SUGAR COOKIES

1 c. sugar
1 egg
1 tsp. vanilla
1 c. butter
1/2 c. milk
3 3/4 c. self-rising flour


Cream together sugar, egg, vanilla, milk and butter. Stir 1 cup of the flour into creamed mixture. Add rest of flour 1 cup at a time, stirring well each time until dry ingredients are mixed in.

Chill for 1 hour. Roll and cut out shapes. (If you don't have cookie cutters handy, an upside down drinking glass will work just as well.)

Bake at 350 degrees for 10 to 12 minutes.

Tips: I dust my board where I roll out cookies lightly with flour. If the dough is too sticky to roll easily, mix in a little more flour.




SIMPLE COFFEE CAKE


1 c. self-rising flour
1 c. sugar
1/4 c. melted butter
1 tsp. cinnamon
1/2 c. milk
1 egg

Combine all ingredients, mix well. Dot with butter and sprinkle lightly with sugar. Bake at about 375 degrees for 20 minutes.

Shortbread. There are many variations using brown or fine sugar, but you can make decent shortbread it with just sugar, flour and butter. Add a little vanilla too.
