Rice cakes get very boring very quickly!

Try polenta. I had a good recipe for this where you either buy it cooked and then slice it or cook it until it is nearly solid then slice it. Put sliced hard boiled eggs on it then cooked spinach and cheese over that and bung it in the oven until warm through. That is good.

My boyfriend does a good thing where he makes a stack of slices of fried aubergine (eggplant) goats cheese and red onions fried in honey, oil and vinegar. He serves it with oven roasted sweet potatoes and rocket salad. Very good.

Tacos & burritos are great if you can get corn-only tortillas and taco shells.

My dad is Coeliac and he loves his steak and potatoes. There are lots of good gluten free sausages on the market in the UK.

A home made stirfry with rice or rice noodles is another good bet. Or Japanese Ramen (noodle soup).....

Too many ideas.... so little time.....
