Sheer size, much like a mountain it takes thousands of years for wind and water to wear it down.

A combination of things. The shape is resistant to wind and wear, they're absolutely huge and made of solid stone, and people have been so mystified by them over the years that even during major wars they've been left alone. Egypt also doesn't get many earthquakes and the pyramids aren't in floodplains.
compare this to the greek temples which suffered from war damage, botched repairs, and salt & moisture laden air from the seas.
