Saute onion in 2 tablespoons butter. Mix with next 5 ingredients. Turn into lightly greased shallow 1 1/2 quart baking dish. Mix remaining butter, melted, crumbs and cheese. Sprinkle on vegetables. Bake at 400 degrees 15 minutes or until browned and bubbly. Makes 6-8 servings.

Probably not in my household! But, if you insist, I suppose you could try for a Mexican or Italian theme using a tomatoe base with spices and include fresh spinach and whole kernal sweet corn.
