I have been cooking for over 40 years and consider myself an excellent cook. I used to have about 50 cookbooks. No more. I've kept a few special, sentimental ones, but the BEST thing I ever found in my cooking career was the magazine Cooks Illustrated. It comes out every two months (you can subscribe or buy at your local grocery store) and every single thing that I ever made out of these magazines came out EXACTLY right. These recipes are tested and retested in America's Test Kitchen in Boston until they come out exactly right. And they TELL you WHY you're doing what you"re doing! It takes the whole guesswork out of everything! They are delicious recipes and easy to follow and are affiliated with America's Test Kitchen which is broadcast on PBS on TV. They accept no advertising and have articles on equipment to buy, taste testings, etc. They also have cookbooks (I own almost all of them). Check it out at www.cooksillustrated.com. You can also subscribe to their website for $25.00 per year and get 13 or 14 years of downloadable recipes and a favorites site. No Kidding, it's the best thing going. I promise you won't be disappointed! Bon Appetit!

Nigel Slater's Real Fast Food, it's full of easy things to make that take 30 ish minutes or less. If you want a cookery book that is specifically English food then Jane Grigson's English Food is great.

Dorling Kindersley do a great children's cookbook, it's a super starter. It doesn't just do English food, it does spag bol and kebabs and other things. But if you're going to buy a cookbook that shows you pictures of ingredients and utensils, you won't go wrong with this.

I've stopped buying cookbooks since I've discovered the hundreds of cooking / recipe sites on the internet... and most of them are free too!
