Tasty Mussels

2kg NZ mussells
1 cup white wine
4 garlic gloves sliced
3 red chilli sliced
1 stick lemon grass chopped
1 bunch corriander chopped

heat saucepan on high
add all ingredients except corriander
seal with lid
leave on heat shaking every now and then to move mussels around evenly
once mussels are open, transfer to serving platter (discard any unopened mussels), sprinkle on corriander

It depends on how much time you have. If you want something to fix the night before, I suggest a breakfast casserole, 6 slices of bread on the bottom, layer a pound of cooked sausage, pour a pint of half and half over the top, then top with shredded cheese - doesn't matter the variety - pop in the fridge, then cook at 350 the next day. If you want something to fix the same day, try boiling some rice, sauteeing some vegetables in a separate pan and adding them together. If you have to have meat, get some of the Louis Rich grilled chicken breast strips already cooked - BAM, an instant meal. - oh, don't forget the teriyaki or soy sauce, depending on your taste. Very quick and family pleasing.

Yummy Yummy Chicken Marsala

4 boneless skinless chicken breasts
Flour
Kosher salt
Fresh ground pepper
1/2 cup olive oil
3 slices chopped bacon
8 ounces mushrooms
1/2 cup sweet Marsala wine
1/2 cup Swansons chicken broth
2 T butter
1/2 cup chopped Italian parsley
1 clove minced garlic
Fresh sliced or shaved mozzarella cheese

1. Flatten chicken breasts by covering with plastic wrap and pounding with a meat mallet until they are only about 1/4 inch thick.
2. Put 1/2 cup of flour in a small bowl. Season with salt and pepper. 3. Heat the olive oil in a frying pan until the oil is hot.
4. Coat both sides of the chicken pieces with flour, shaking the excess off into the bowl.
5. Fry the chicken in the hot oil for 3-4 minutes on each side until golden brown.
6. Lower the heat to medium, fry bacon pieces in frying pan for a few minutes.
7. Add mushrooms and minced garlic and saute for approximately 5 minutes until brown and moisture has evaporated.
8. Season with salt and pepper.
9. Add Marsala to the pan and cook for 30-60 seconds to cook out the alcohol.
10. Add the chicken stock and simmer for 1 minute.
11. Add the butter. Place chicken back into the pan.
12. Simmer mixture to heat the chicken.
13. Season with salt and pepper. Top with chopped parsley.
14. Serve with fresh sliced or shaved mozzarella cheese.


This will make 4 servings.

The Ultimate Strawberry Shortcake

1 quart fresh strawberries
1/2 cup sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 (8 ounce) container frozen whipped topping
1 (14 ounce) angel food cake, cut into cubes (I buy the cake already made)


Wash, stem, and cut strawberries in half.
Add sugar; toss to mix well.
Chill.
Beat cream cheese and powdered sugar well.
Fold in whipped topping and cake cubes.
Spread cake into an ungreased 13x9 dish.
Cover and chill for at least 2 hours.
Cut cake into squares; top with strawberries.

Cranberry Spinach Salad

8 servings

INGREDIENTS
1 tablespoon butter
3/4 cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil
DIRECTIONS
In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
In a large bowl, combine the spinach with the toasted almonds and cranberries.
In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.

Healthy pizza

Ingredients
Boboli thin crust pizza
1 can Cut up tomatoes
Garlic powder,pepper, basil
Low fat shredded mozzarella cheese
Toppings:
Vegetables (your preference)
Examples: sliced mushrooms, anchovies, brocoli, sliced olives
Chicken (bite size pieces)
Shrimp
Parmasan cheese

Preparation
Pre heat oven to 425


With a slotted spoon, take the tomatoes and place around the pizza.(Try not to saturate the dough)


Spice according to your taste with garlic,pepper & basil


Place toppings (vegetables, chicken, shrimp etc)


Sprinkle with mozzarella


Sprinkle with parmasan cheese


Bake in oven according to directions on the Boboli package

cook some egg noodles.
cook some chicken thighs or whatever you prefer.
in casserole dish lay noodles on botton put dhicken on top. cover with spaghetti sauce. sprinkle generously with parmesan cheese. put in oven or microwave till parmesan melts into sauce. my family loves this and it's easy.
