fruits and other produce contain an enzyme (called polyphenol oxidase or tyrosinase) that reacts with oxygen and iron-containing phenols. The oxidation reaction basically forms a sort of rust on the surface of the fruit. You see the browning when the fruit is cut or bruised because these actions damage the cells in the fruit, allowing oxygen in the air to react with the enzyme and other chemicals.
The reaction can be slowed or prevented by inactivating the enzyme with heat (cooking), reducing the pH on the surface of the fruit (by adding lemon juice or another acid), reducing the amount of available oxygen (by putting cut fruit under water or vacuum packing it), or by adding certain preservative chemicals (like sulfur dioxide).

The browning you see is the fruit reacting to oxygen in the air. Any acid will prevent this. Lemon Juice works well but lime juice, vinegar, grapefruit juice, & wine work just as well. If you blanche the fruit, the cooking action will stopt the reaction but tends to make some fruits mealy. salting the fruit is also a good localized option but it odes not work as well as acids or blanching.

I gather you are referring to fruits like apple/pear/etc... add a pinch of salt to some water and soak the cut fruits in it for a short while. If you don't like the saltish taste, just rinse them before eating.

you can sprinkle with fruit fresh. or rinse with a water/fruitfresh mix. it works great for canning. you can also use the fruit fresh any of the two ways and put in a ziploc bag and freeze. fresh frozen fruit is the bomb.
