There is not a "replacement" spice for cloves. Spices included in pumpkin recipes usually call for cinnamon, nutmeg, ginger and cloves. If you don't have the cloves just put in the other spices called for. I have made pumpkin pie without the cloves and it turns out just fine.

You can substitute ground allspice for a similar flavor. Allspice tastes like a mixture of several spices: cinnamon, cloves, nutmeg and black pepper, hence the name. Good luck.

Just add a pinch of cinnamon, nutmeg or ginger. Cardamon adds great flavor too! Care to post the recipe in additional details? I've never seen a recipe for pumpkin bars - sounds yummy!

Cloves are not really necessary but you can use cinnamon and nutmeg or fresh cloves, or pumpkin pie spice

You can leave the cloves out all together. My father isn't able to eat cloves and I add everything in the recipes but the cloves.

cinnamon, garam masala, nutmeg, allspice, 5 spice powder, ginger, vanilla, black pepper - all spices that would add yumminess to pumpkin bars. Add 2 in moderation for a great depth of flavor. :)
