Mango Salsa


INGREDIENTS:
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
PREPARATION:
Combine all ingredients and chill. Serve with grilled fish or chicken.
Makes 1 1/2 cups of mango salsa.

Before I found the homemade salsa recipe I use all the time, I bought a salsa recipe book. It contains many recipes like you want.

If you add canned beans you can have a really yummy protein filled snack/meal

1 small onion, diced
2-4 garlic cloves, smashed
1 can black beans
1 small can corn kernels
1 diced red pepper (or roasted peppers)
1/2 jalepeno
cilantro
2-4 tomatoes, seeded and diced
plenty of salt and pepper
good drizzle of olive oil
splash of balsamic vinegar
lime juice/zest

add other veggies at will: cucumber, artichoke hearts, carrot, celery, scallion, herbs, green beans, snap peas...

add 1/2 cup of diced pineapple or mango for some sweet and spicy action.

I make one pretty much the same as Jewel except I use chopped pineapple instead of red pepper and cilantro instead of mint.
