Spinach be so popular since in the year 1533 Catherine de' Medici became Queen of France & she so fancied spinach & insisted it be served at every meal. Spinach dishes are known as "Florentine" because Catherine came from Florence, Italy.

And She dubbed "florentine" on any dish containing spinach !

She influenced this areas cuisine. Also spinach was regarded as healing since had high iron content.

It has been reported that sometime in the 12th century there was an unexpected week long freeze that froze all fruits and vegetables EXCEPT the Spinach at that time. For the next several weeks the locals used Spinach with many of their traditional recipes and the traditions were influenced by Spinach since that century.

Cathrine De Medici was an Italian Noblewoman . She was from the Florentine (Florence, Italy) Family. She married that idiot Henri II of France.

When she went to Henri's court she brought with her SPINACH,
other foods, and a wacky new invention...THE FORK!
