They are different kinds of wine that you may use in the cooking process. They both have a different flavors. Depending what you are cooking they both have their place. I prefer Marsala when cooking veal, but Madeira is best with chicken. Try them both in your favorite dish and decide for yourself.

Wines used for cooking

both of them are fortified wines. meaning that they are wines that are distilled (ike whisky) then added back to a local white and aged in casks for a couple of years. i say local because they are both named for the towns that produce them. they were not intended for cooking, however, the wines were fortified to prevent spoilage by saliors transporting goods throughout the mediteranian. you should try them on there own sometime (of course you have to buy the higher end stuff) they are very good, ranging from fruity to pecan pie in a glass. and of course there are endless olivegarden knock-off dishes that can be done with both, but try reducing either one of them down with some brown sugar untill it is very thick, maybe 1 cup wine to 2 tbls of sugar reduced to 1/4 cup, and pour over ice cream or cheesecake.
