ROASTED CHICKEN WITH BALSAMIC VINAGRETTE
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
2 tablespoons olive oil
Salt and freshly ground black pepper
1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
1/2 cup low-salt chicken broth
1 teaspoon lemon zest
1 tablespoon chopped fresh parsley leaves

Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.

Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

Cream Of Chicken Casserole.

what you need---

Two cans Cream Of Chicken
16 ounces of Sour Cream
2.5 - 3 pounds chicken tenders
(boneless skinless, cooked with just salt and pepper to taste)
Two Tablespoons of butter, melted
One box, two rolls (they come in fours) of Ritz Crackers

They have health concious versions of everything I've listed for a healthier meal seeker.

Cook the chicken in a 13X9 pan lined with tin foil (for easy cleanup/reuse).Cover the chicken while cooking. Should be about an hour to reach safe temps and cook through.

While this is cooking take the sour cream and the cream of chicken soup, whip/whisk them together. (To this you can add a can of corn or whatever vegetable you like.)

when the chicken is done, drain/cut into bite size peices, cubes work well. Remove the foil from the pan. Mix the chicken into the Soup/Cream mix, pour this back into the pan.(you could now sprinkle with cheese(s). should you want to) Crumble up the two packages of crackers and cover. Drizzle the melted butter over this cracker layer to keep it from drying out too much.

Bake again for about 20-25 minutes. At this time the cheese (if added) is all melty and ooey gooey, the crackers are crips and the whole thing is a steaming "pot of gold".

For the kids, should they resist, add ketchup. It's yummy.

Sour Cream & Chicken Enchiladas

2 lb. boneless, skinless chicken breast
2 cans cream of chicken soup
8 oz. sour cream
4 oz. can chopped green chilies
1/2 medium onion, chopped
16 oz. grated Monterey Jack cheese
flour tortillas

Boil chicken until cooked and tender; drain, reserving some broth. Shred in processor or chop. In medium saucepan, mix soup, sour cream, chilies, and onion. Heat over low heat, but do not boil. Add broth until sauce is pourable. Spread thin layer of sauce in 9x13 pan to prevent sticking. Fill tortillas with chicken, cheese, and a spoonful of sauce, then roll up and lay crosswise in pan. Top with remaining sauce and cheese. Heat at 350 until cheese melts and begins to brown (about 20 min.). Great with rice and beans.

Take round steak that has been tenderized and cut it into small strips. Put a small piece of bacon on the steak and roll it up and put a tooth pick through it. Do this until all of the steak is rolled up with bacon in them. Put them in a roasting pan with new potatoes and onions. Bake for about an hour at 350

STEW ! ! ! & BISQUITS

Any kind of stew is the answer. I like to cook mine on our wood burning heating stove (our only source of heat) It picks up some absolutely wonderful flavors from the wisps of smoke when you add a log and the temperature varies up and down as you stoke and burn down.
You can get liquid smoke from the store. Give it a try. Simmer a long time and change the heat setting on your cook stove.

Make homemade bisquits with this simple recipe

1 cup self rising flour
1 heaping tablespoon REAL mayonaise
3/4 cup milk

mix flour and mayo with fork to course cornmeal appearance

add milk till dough is formed

knead 8 to 10 times

let stand 5 minutes

roll and cut with cutter ( drinking glass, coffee cup) or pinch off and roll rough edges under

bake till golden brown

Mama's Best Broiled Tomato Sandwich
"A broiled sandwich, made of fresh season tomatoes, with an Italian taste. A perfect match for soup

INGREDIENTS
2 tablespoons olive oil
2 tablespoons balsamic vinegar
4 ripe tomatoes, sliced
3 tablespoons mayonnaise
1/2 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
3 tablespoons grated Parmesan cheese, divided
4 slices bread, lightly toasted
DIRECTIONS
Preheat oven to broil.
In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

"Simple, savory, and very flavorful variation on new red potatoes. Excellent side dish!"

INGREDIENTS
2 pounds red potatoes, quartered
1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in an 8x8 inch baking dish.
In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

the chicken dinner mentioned above is a fave of ours to but also another that is cheap and feeds a load is goulash


brown up bunch of hamburger add a couple jars of Pregu pasta sauce and cook a bunch of elbow machroni nooldes according to package mix it all up big pot serve with salad, corn or green beans whatever you like and garlic bread or oven toast.
Oven toast is just any kind of bread ya got laying around you need to use up. We use hot dog buns, hamburger buns, french bread regular bread, butter it and add garlic powder if ya like and toast it in oven till its golden brown.


Kids love it even my picky 6 year old bro eats this (im 25 and im always trying to get him to eat what i cook)

spanish rice goes along way and taste great. I scramble hamburg with an onion and green pepper. drain grease. add large can of diced tomatoes and large can of crushed tomatoes, add can of water and season with mild salsa, chili powder, garlic powder. bring to a boil and add a medium box of minute rice. stir together, cover and take off the stove. ready in 15 minutes or so. goes good with garlic bread and a salad
