Your main source of quick energy comes from carbohydrates. Once you use up your carbohydrates, your body begins to use fat. Fat is comprised of a glyceride molecule with three chains of fatty acids attached to it. Each fatty acid chain has about 30 or so fatty acid molecules. So when you exercise, your body breaks the bonds between those fatty acid molecules and uses them for energy. So you have to break 90 fat molecules to lose a full molecule of fat, which is also why it's so hard to lose fat.
