The Janka scale will help you with your selections for the traffic level of your home. Oak is beautiful and economical for a more traditional house. Brazillian Cherry blend with a more elegant and formal house. A stained maple will create a light bright clean contempary look. Take clues from other woods in your house especially if you already have an existing banister that is goiing to remain in place. Most of the time stairs are finnished on site so you can choose from a full range of stains or match existing features in the home.
Any runner that you choose to install over your wood should be made of nylon or wool. Select a construction that is low and dense with a tight backing to prevent carpet stretch and wrinkling. A firm felt pad installed only on the treads under the runner will absorb foot shock and help to maintain the carpet for a very long time. Choose a medium color to hide dirt and stains. Too dark all the dust and white dirt will show. Too light and you'll see every little drip and drop. The reason for the runner? You may not want one at first because you'll be enjoying the beauty of the wood but practically speaking; it's safer. Your runner does not have to be expensive. Choose any broadloom carpet. Having a border is not a requirement. This way width of the runner doesn't become a restriction for you.

Laminate flooring is OK for stairs. It can be rather expensive installed on stairways, not due to the cost of the laminate flooring, but the trim pieces needed to do a responsible job on stairs are expensive. You may want to check into board flooring for stairs (wide boards typically used for stair applications). They are usually rounded on the edge and do not need the trim that lalminate flooring needs. I'm not sure of the cost though. Good luck with your project.

I had the exact same problem with the laminate flooring in my wife's craft room above the garage. I did something very similar to what Jeff Smoker is saying. The difference is I have a wood shop and was able to make the piece my self because I could not find a ready made piece anywhere in town.

No, I would use the real thing there.Laminate flooring is easy to use but not that dependable.Carpet would be safer.
