Any recordings by John Williams (the guitarist, not the film composer) are outstanding. Joaquin Rodrigo's music is great, particularly the ultra-famous Concierto de Aranjuez and the recording by the Romeros brothers of Conceirto Andaluz for 4 guitars and orchestra. For more baroque guitar music, go for Domenico Scarlatti. Some even say he invented Spanish guitar, even though he was Italian.
