I planted a mint plant about 2 years ago and it has expanded beyond expectations. What can I do with all of this mint?

Make mojitos!

Mojito

Scale ingredients to servings
3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

Come time for the Kentucky Derby, you can make Mint Juleps.

Put some mint leaves and sugar in the bottom of a sturdy tumbler glass. Muddle the mix into a paste (end of a wooden spoon will work if no muddler is available) Add ice and bourbon and top with a splash of club soda.

Make mint julups!

4 fresh mint sprigs
2 1/2 oz bourbon whiskey
1 tsp powdered sugar
2 tsp water




Muddle mint leaves, powdered sugar, and water in a collins glass. Fill the glass with shaved or crushed ice and add bourbon. Top with more ice and garnish with a mint sprig. Serve with a straw

For every day use, put a pitcher of water in the fridge with a big sprig of mint- very refreshing, and strangely enough the mint will develope roots soon so you could replant it if you want to..

You can make a tea of dry mint leaves. It's very good for stomach ache and diarrhoea.
