I don't know any kid friendly recipes for the rest of your family unless you all like fish sticks and macaroni and cheese... lol However, I have 5 kids and they all went through stages of being picky eaters. I have 2 that will now eat anything you put in front of them. I have 3 that have gone through or are going through the "hot dog diet" the "peanut butter diet" the "chicken nugget diet" the "ketchup on everything diet" the "rolled up bologna and cheese diet".... you get the idea. My youngest is 20 months so I will keep going through it for awhile. My oldest is 12 and still has to have ketchup on a lot of things I would never even consider... lol

I find that little kids like plain things... pasta, rice, meats, breads. You may need to accommodate his tastes for awhile even if it means him having a peanut butter sandwich at dinner every night. Offer him what you are having of course but don't push it. I would avoid lots of spices and fancy sauces. It will not last forever. Good Luck to you.

My kids love chicken and rice. It is so easy to make and there are no strong flavors for them to turn their noses up! We make it the easy way, too. I boil (simmer) one chicken breast (on low) until it's done and remove it. Then add rice to the broth and cook for 20 minutes. Turn it off and add cut up chicken back to the pot. We have this on Sundays and let the chicken cook while we are at church. My kids like canned green beans, so that's what we usually put with it. They also love spaghetti...another very easy and very quick meal. When they are being picky at lunch or on the weekends, I make them a "tray" each of their fav's. This usually includes any of the following : cheese (they like string a lot), cucumbers, baby carrots, grape tomatoes, apple slices, bannana slices, red grapes, cantelope, crackers, or whatever else is on hand. They like to dip the carrots and apple slices in peanut butter and for some reason they like to eat with forks and spoons from their kitchen playset or with a toothpick. I guess sometimes it's all about presentation!

My son loves anything with velveeta melted on it. or:
Egg noodles
Cream of mushroom soup
a little cream or milk
a little butter~ not too much
you can add chicken or tuna if you want

Just cook the noodle and then add other ingredients and simmer for a few minutes.

My doc told me that this is common for kids to dao this with food. he said that if there is one thing that they like just to let them eat it all the time and they will eventually get sick of it and try something else. Will he eat baked potatoes or baked sweet potatoes? You just have to keep trying with him.

I don't know why, but my son loves casseroles that have a "crust" on the top. So, any casserole you can make (chicken & rice, mac & cheese, baked pasta w/ spaghetti sauce, etc), sprinkle a little grated cheese on top, then sprinkle a little bit of canned bread crumbs on top of that, and bake as usual. The bread crumbs make a really nice "crust" and my son goes crazy for pieces that have a lot of "crust" on them. Good luck! Hopefully it's just a phase!

an idea that I read in Parents magazine was to put the food on skewers so that it made it fun
