I'm just going to use Ragu with mushrooms or veggies.
Then Ricotta cheese mixed with spinach and mozzarella.
Then top with Parmesan.

Anything else I should do? Should I use the cheeses differently?

Maybe add an egg or two to the ricotta so it will set up after it's cooked?

Add an egg in with the ricotta to hold it together. You can also add about 1/2 cup of parmesan to this mixture. If you like meat, Italian sausage or ground beef is great. . or a mixture of the two. Be sure to cook this first before adding this as one of the layers of your lasagna, and drain it between 2 paper towels real good. Also, be sure to layer additional mozerella cheese between the cheese mixture layers, and also on top, under the parmesan cheese. You can add a mixed Italian spice to the ingredients too. Yummmmm!

I think it sounds yummy. You could add fresh green or red peppers. I just use mozza cheese and I sometimes mix it with sour cream. Of course, Parmesan cheese at the top.

Sounds great. I did the same last week. I just sauteed fresh mushrooms and wilted the spinach with them. We also had a mix of hamburger and Italian sausage too. Sounds really good just like it is though. Happy eating.

It's very good like that. You can also top it with a layer of mozzarella but it can get kind of gooey.

Try using thinly sliced grilled eggplant instead of pasta sheets.

I make it all the time, sometimes even alternating the pasta sheets with the eggplant

Usually an egg is good to hold the "filler" together. But if you are trying to do do the vegetarian thing then you should be fine.
