Portland St, Nathan Rd, in MongKok, Hong Kong. Also, Jordan area of Hong Kong is a good place. If you want some bar action, go to Wan Chai in Hong Kong Island.

China has very puritanical laws. Prostitution (although present) is unlawful. Most men looking for women go to KTV bars (expensive!), hotel bars (also expensive), or the "barber shops", where services may be available. If you take a young lady to your hotel, remember that visitors must leave the room by 23:00. While not common today, the Gong An (police) have been know to raid hotels in the past. It is probably best to go to a bar, meet a local (non-professional) girl, and convince her to go to your place.

It's easier to find a prostitute in China than to avoid one. It's part of the mass influx of people from the countryside who are desperate for work. And most of these girls are in a situation where they get little money themselves for their services. It's illegal, so they have little protections from their bosses. So please keep in mind the circumstances when you venture out.
